Why I always shoot in colour.
Black and white has always been and will always be a popular form of photography. It adds drama, charm or class to many images.
In the days of film to get the best results one would have to choose: Shooting with B & W film colour would not be an option, while shooting with colour film would not get you the same results if you were to try and convert to black and white. The use of various filters was used with the B&W film to get the desired effects.
Now, shooting digital has really allowed for a the best of both worlds. Shooting exclusively in colour one can easily convert to B & W with the computer, and the conversion can be done with colour filters in programs such as Photoshop and many others.
I like the flexibility, no great colour opportunities are lost and Black and White is always an option, the photographer can choose. Some photos look good both ways.
